What Exactly Is A2 Cow Ghee — and Why Are Mumbaikars Obsessing Over It?

Walk through any premium grocery store in Bandra, Juhu, or Powai today and you will see it — A2 ghee is everywhere. But beyond the marketing, what actually makes A2 ghee different from the regular ghee your family has been buying for years?

The answer lies in a single protein: beta-casein. Cow's milk contains beta-casein protein in two forms — A1 and A2. Regular commercial ghee is made from the milk of crossbred or foreign cows (like Holstein Friesian) that produce A1 beta-casein. Our Gir A2 Desi Cow Ghee is made exclusively from the milk of indigenous Gir cows — a native Indian breed that naturally produces only A2 beta-casein.

This distinction is not just marketing. Research published in nutritional science journals suggests that A1 and A2 proteins are metabolised differently in the gut — with A2 being significantly easier to digest and far less inflammatory for most people.

Why Gir Cows Are the Gold Standard for A2 Ghee

Not all A2 ghee is created equal. The quality of A2 ghee depends entirely on the breed of cow and how the milk is processed. At JenishSweet, we source from Gir cows — one of India's oldest and most revered dairy breeds, originally from the Gir forest region of Gujarat.

Gir cows have a distinct genetic makeup that guarantees pure A2 beta-casein in every drop of their milk. They are raised on open pastures, fed natural fodder, and are not subjected to industrial dairy farming. This means their milk — and the ghee made from it — is naturally richer in nutrients, deeper in colour, and more aromatic than anything from a commercial dairy.

Our ghee is made using the traditional bilona method — milk is curd-set, hand-churned to extract butter, then slow-cooked on a low flame until the ghee clarifies and turns golden. This ancient process retains every micro-nutrient, every enzyme, and every bit of the incredible aroma that makes real desi ghee unforgettable.
